Thai peanut sauce, also known as “satay sauce,” is a creamy and savory condiment originating from Thailand. It’s made primarily from peanuts, which give it a rich and nutty flavor, along with a combination of other ingredients that contribute to its distinctive taste. Different version across Southeast Asian Nation varies, Indonesia, Malaysia and Singapore has its own variation. This is Thai peanut sauce and here’s how you make it!

Fresh Peanuts

INGREDIENTS:

1/2 cup roasted unsalted peanuts

2 cloves garlic, minced

1 shallot, finely chopped

1 stalk lemongrass, white part only, finely minced

1 tablespoon fresh ginger, grated

1 tablespoon fresh lime juice

2 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons coconut milk

1 tablespoon palm sugar (or brown sugar)

1 tablespoon Thai red curry paste

1 tablespoon vegetable oil

2-3 tablespoons water (as needed)

Fresh cilantro, chopped (for garnish, optional)

DIRECTIONS:

  1. In a food processor or blender, pulse the roasted peanuts until finely ground. Be careful not to over-process, or it may turn into peanut butter.
  2. In a small saucepan, heat the vegetable oil over medium heat. Add the minced garlic, chopped shallot, minced lemongrass, and grated ginger. Sauté until fragrant and softened, about 2-3 minutes.
  3. Add the ground peanuts, lime juice, soy sauce, coconut milk, palm sugar, and Thai red curry paste to the saucepan. Stir well to combine all the ingredients.
  4. Depending on your preference, add 2-3 tablespoons of water to the sauce to reach your desired consistency. Stir well to incorporate.
  5. Reduce the heat to low and let the sauce simmer gently for about 5 minutes, stirring occasionally. This helps the flavors meld together.
  6. Taste the sauce and adjust the seasoning if needed. You can add more lime juice for acidity, more soy sauce for saltiness, or more palm sugar for sweetness.
  7. Transfer the peanut sauce to a serving bowl. Garnish with chopped fresh cilantro if desired.
  8. Use the peanut sauce as a dip for satay skewers, spring rolls, or drizzle it over noodles, salads, or grilled meats. Enjoy the authentic flavors of Thailand!
