INGREDIENTS


1 large onion, cut into ½-inch rings
½ cup almond flour
¼ cup grated parmesan cheese
1 tsp paprika
½ tsp garlic powder
½ tsp salt
¼ tsp crushed black pepper
2 large eggs, beaten
Avocado oil for frying

DIRECTIONS

In a bowl, toss the almond flour with parmesan cheese, paprika
powder, garlic powder, salt, and crushed pepper. Dip the onion
rings into the beaten eggs, then coat them with almond flour.
Heat avocado oil (enough for frying) in a non-stick skillet over
medium-high heat.

Fry the onion rings, occasionally turning, until golden brown
and crispy. Transfer the onion rings to a paper-arranged plate to
drain off any excess oil. Serve hot.

To make onion rings crispier, here are some tips:

Choose the right onions: Use large, sweet onions like Vidalia or Walla Walla for milder flavor and better texture.

Slice evenly: Cut the onions into thick, uniform slices to ensure even cooking.

Soak in buttermilk: Soaking the onion rings in buttermilk for at least 30 minutes helps tenderize and flavor them.

Dry thoroughly: Pat the onion rings dry with paper towels before coating them in batter.

Create a good batter: Use a batter that combines flour, cornstarch, and seasonings with a carbonated liquid like club soda for a light and crispy texture.
